Bubble tea is a type of tea beverage that originated in Taiwan, China and is popular around the world. After adding the Tapioca Pearls to the milk tea, it becomes bubble tea.
Bubble tea is a type of “foam black tea” culture in Taiwan, China. Initially, merchants in Taichung mixed black tea with fresh milk and soft, chewy Tapioca Pearls to make a drink. Although it is just Tapioca Pearls added to milk tea, it has become one of the most representative beverages and snacks in Taiwan, China.
Bubble tea is an interesting drink, usually composed of black or oolong tea, milk or fruit flavors, sweeteners and the chewy texture in Taiwanese cuisine, known as QQ (you might think of the “bubbles” in bubble milk tea). In most cases, QQ takes the form of cassava pearls.
The name “bubble tea” originally came from the bubbles formed when the milk tea was shaken, rather than the interesting pearls in the drink. This beverage is known by many other names, including “Pearl Tea”, “boba Tea” and “Cassava Tea”.
The “pearls” used in bubble tea are made from sweet potato starch (referred to as starch in the south) into Tapioca Pearls. Before being added to the milk tea, the Tapioca Pearls are usually soaked in syrup to ensure that they still retain their sweetness in the slightly sweet milk tea. The base of milk tea usually uses black tea, but some stores also offer bubble milk tea made with green tea (known as pearl green milk or pearl milk green). Many stores also add foods with similar textures such as coffee jelly, tofu pudding, pudding, and agarwood jelly to their milk tea, allowing customers to choose freely to enhance the taste.
Cooking method of black flavor Tapioca Pearls:
Take one kilogram of Tapioca Pearls. Add 10L of water to the pot and cook (first bring the water to a boil, then add the Tapioca Pearls. Make sure the water is boiling before using them, otherwise they will dissolve into powder immediately. Keep the water boiling over medium heat and stir with a strainer). The cooking time is 15 to 20 minutes (you can adjust the cooking time according to your preference for softness and hardness; the longer you cook, the softer they will be). After the time is up, cover the pot and turn off the heat. Simmer for another 15 to 20 minutes (the longer it is simmered, the better the elasticity) or cook until all the Tapioca Pearls become transparent. When the time is up, take out the pearls and rinse them under cold water. Take a large bowl, put in the Tapioca Pearls and add white granulated sugar until the pearls are soaked. Stir well and let it stand for about 30 minutes. Boil 500mL of water and add 750g of sugar while stirring continuously. You can get 22oz (638mL) of syrup (you can also directly replace it with honey).
