Recipe-Buckwheat Noodles with Fried Prawns

Ingredients (2 servings):

Main ingredients:
-Buckwheat noodles 200g
-Prawns 4 (about 100g, fresh or frozen black tiger prawns or shrimps are recommended for better taste)
- Broccoli 150g (about half a head, choose broccoli with firm buds and emerald green color)

Sauce:
-Soy sauce 2 tablespoons (about 30ml, Japanese soy sauce or light salt soy sauce is recommended)
-Sesame oil 1 tablespoon (about 15ml, sesame oil is recommended)
-Honey 1 tablespoon (about 15ml, maple syrup or sugar can be used instead)
-Half a lemon (peel and juice, about 15ml lemon juice)

Ingredients:
-Red pepper 1 (choose the spiciness according to personal taste, remove the seeds and cut into strips)
-2 shallots (chopped, green part for decoration)
-2 cloves of garlic (chopped, add more if you like garlic flavor)
-2 cilantro (chopped, omit if you don’t like it)
-Cooking oil, salt to taste

Steps:

1.Pre-treat ingredients (about 10 minutes)

Lemon treatment: Scrub the surface of the lemon with salt, rinse and dry. Use a grater to gently scrape the yellow part of the lemon zest (avoid the bitter white part), squeeze out the juice of half a lemon and set aside.

Vegetable treatment: Cut broccoli into small florets, peel and slice the stems (don’t waste it!). Deseed the red pepper and cut into thin strips, cut the shallot into chopped green onions, mince the garlic, and chop the cilantro.

Preparation of prawns: Cut off the shrimp claws and whiskers, use a toothpick to pick out the shrimp thread from the second section of the shrimp back, wash and dry with kitchen paper, sprinkle with a little salt and marinate for 5 minutes.

2. Prepare the sauce (5 minutes)

Mix in a large bowl: light soy sauce, sesame oil, honey, lemon juice, lemon zest, minced garlic, red pepper shreds, stir gently until the honey melts, taste the saltiness, and add a little salt according to taste.

3. Cook noodles and blanch vegetables (8 minutes)
Cook noodles: Add enough water (about 1.5L) to the pot, boil over high heat, sprinkle a small spoonful of salt, add soba noodles, and gently spread with chopsticks. Cook according to the time recommended on the package (usually 3-5 minutes), taste the texture during the period, and cook for 30 seconds longer if you like it softer.

Blanching broccoli: When there is 1 minute left to cook the noodles, add the broccoli and blanch until the color turns dark green (about 1 minute), then turn off the heat immediately.

4. Rinse and drain (2 minutes)
Pour the noodles and broccoli into a strainer and rinse with running cold water until completely cooled (this will make the noodles more chewy). After draining, use kitchen paper to gently absorb excess water on the surface.

5. Pan-fried prawns (5 minutes)
Heat a frying pan over medium heat, pour in 1 tablespoon of cooking oil, add the prawns after the oil is hot, and fry until both sides turn red and bend (about 1-2 minutes per side), and the prawn shells are slightly crispy and more fragrant.

6. Assemble and plate (3 minutes)
Pour the drained noodles and broccoli into the prepared sauce bowl, sprinkle with most of the chopped green onions and coriander, and mix well with chopsticks.

Place the noodles in a deep dish, top with the fried prawns, and sprinkle with the remaining chopped green onions and coriander. You can add a little sesame oil to enhance the flavor.
